Mount Doom
I brought this deck with me to Con of the Rings 2024 specifically with the Mount Doom quest in mind. Our team ended up having 4 players at Mount Doom and 4 players at the Black Gate for the epic multiplayer finale at the end of the con, and we destroyed the Ring on our first attempt at the quest. This deck will work in both multiplayer (where extra copies of Let Us Sing Together can be given to other players, and Tom Bombadil's healing can be spread out) or in true solo and succeed at the quest.
General Strategy
The name of the game for Mount Doom is to manage threat, get your willpower as high as possible, get ways to ready your heroes, and have as few allies in play as possible.

Threat: The Dire keyword prevents you from lowering your threat by more than one with non-boon player card effects per round, but that's perfect for Hey Dol! Merry Dol!, which you can recur back to your hand.

Willpower: Stack as many songs as possible onto Tom as you can to maximize his willpower. For Goldberry we have Silver Circlet, and for Bilbo we have Let Us Sing Together, Sting, as well as the new Master Burglar card from ALeP (which isn't in RingsDB yet).

Readies: Goldberry will allow you to quest with all your heroes without exhausting them (thanks to Let Us Sing Together). In addition to that we have Fatty Lumpkin for Tom, and Fast Hitch for Bilbo and Frodo.

As Few Allies As Possible: You should be able to get by with just one or two allies. Every time I've used this deck I get by with just a single Master of the Forge.
Oh and Combat Happens Sometimes
In true solo, you can often get by without ever engaging an enemy. In multiplayer this is less likely. When you do have enemies, you can ping damage to them in the staging area with Bilbo Baggins, hit them with direct damage with Tom Bombadil with a Song event like Hope Rekindled, and hit them with even more direct damage with Sting and Spear of the Citadel on Bilbo. If the enemy doesn't die immediately from all the direct damage, keep Bilbo alive by using Song of Mocking on him with Tom Bombadil.
Very fun deck. Song of Mocking is a very cool choice here!
