I had a lot of fun playing Fire in the Knight and I found it to be a pretty challenging quest to build against. This is the deck that I built which was able to win against the quest three times, just don't ask me how many attempts it took. I love the theme of this quest and it feels awesome when the dragon swoops at you and just bounces off of Beregond.
The main idea is to get Blood of NĂºmenor on Beregond with a strong pool of resources through Steward of Gondor and The Day's Rising. You also need to get a readying effect on him for the late game, either Unexpected Courage or Armored Destrier. Once you have Beregond set-up you'll be able to take on the dragon without any problem.
The rest of the deck is pretty self-explanitory. You have a lot of cheap allies that are effective questers to get through the side-quests. Treebeard is pretty critical for offense, so you want to play him as early as you can. Narya helps with your resource smoothing, but also allows Treebeard to block and attack multiple times with some amazing stats in the late game.
This deck is a lot of fun to pilot, but I think I feel that way about any deck that has hero Gandalf. Wizard Pipe and Gildor Inglorion's ability helps you manipulate what is on the top of your deck. Let me know if you play it and have any success.
Now that the game is "finished" I can safely say that FitN is my favorite quest. Looks like a solid deck!
